Vor einiger Zeit habe ich mich schon einmal an die Zubereitung dieser Ricottaspeise gemacht. Damals allerdings mit mäßigem Erfolg, der Ricotta ist mir zerflossen, nach dem Wenden glich das Ganze mehr einer Eierspeise, als voneinander unabhängiger Küchlein. Jetzt, Monate später, bin ich gereift und würdig genug, mich erneut an die Zubereitung dieses unglaublich komplexen Gerichtes zu wagen.  Und siehe da, Mission geglückt – dieses unvollständige Kapitel meiner Kochgeschichte kann ich nun entgültig schliessen :) Mehr »

Pangasiusfilet mit Ratatouille – Rekordverdächtig

Der größte Süßwasserfisch der Welt ist … jawohl, ein Pangasius. Die genaue Bezeichung des Tieres ist “Mekong Giant Catfish”. Der größte je gefangene Fisch wog 300kg bei einer Länge von 2,7m – mein Filet war nur rund 20cm groß. Das stört mich jetzt auch nicht wirklich, die Pfanne eines 2,7m-Fisches würde ich gerne Mal sehen bzw. den zugehörigen Pfannenheber. Könnte sich als logistisches Problem herausstellen. Aber vielleicht denk ich da auch nur zu klein. Mehr »

In Österreich hat der Mais viele lustige Namen. Das Land wär zwar nicht besonders groß, trotzdem hat jede Himmelsrichtung dafür einen anderen Namen: im Osten nennt man ihn Kukuruz, im Süden ist er der Woaz und im Westen der Türken. Bei uns in Tirol heisst der anscheinend deswegen Türken, weil er über die Türkei zu uns nach Österreich gelangt ist. Komisch … und ich dachte immer die Türken brachten uns den Kaffee – sieht ja noch nicht mal ähnlich aus. Mehr »

Schweinsschopf mit warmem Bohnensalat

Leider ist meine Wohnsituation nicht ganz optimal – soll heissen: ich habe keinen Garten bzw. große Terrasse. Wozu ich das brauchen würde ? Na zum Grillen. Denn auf meinem Minibalkon kann ich das meinen Nachbarn nicht antun – also den wunderbaren Geruch riechen zu müssen aber nichts davon abzubekommen ;) Scherz am Rande. Wenn ich denn mal wo zum Grillen eingeladen bin nehme ich gerne  ein schönes Stück Schopf mit. Zugegebenerweise ist es nicht die Königsdisziplin des Fleisches, trotzdem unglaublich saftig, schmackhaft und trotzdem sehr preiswert. Der warme Bohnensalat kann den Griller zwar nicht vergessen machen, ist aber trotzdem eine Wucht. Mehr »

Knusprige Puffer, dazu ein feiner Dip – sind ja herrliche Aussichten. Das es nicht immer Kartoffel sein muss beweisst dieses Rezept. Eine abwechslungsreiche Alternative ist die Zucchini – entwässert eignet sie sich hervorragend zum Puffermaterial. Vollgepackt mit Kräutern bekommt das Ganze schon einen sehr gesunden Touch – wäre da nicht das Öl in dem die Teile gebraten werden. Aber was soll’s – gut muss sein – und das ist es. Mehr »

Meistens gibt es bei mir nur Schweinfleisch, Rindfleisch oder Fisch. Das liegt daran dass mein Nahversorger selten mehr Auswahl hat. Doch heute hab ich mal ein Lammrückfilet bei einem Metzger erstanden nachdem mittlerweile soooo viele Rezepte davon handeln. Ein wenig die Bücher studiert um die richtige Garzeit zu finden und schon ging’s los. Extrem einfache Zubereitungszeit und super zartes Ergebnis. Liegt aber sicherlich auch an der hervorragenden – und nicht ganz günstigen – Qualität des Fleisches. Mehr »

Es ist wirklich ganz ganz selten das ich neue Kartoffeln bei meinen Nahversorgern finde. Und dabei liebe ich gerade die besonders, sind sie doch superlecker mit der Schale zu verputzen. Sie sind so herrlich unkompliziert – passen also sehr gut zu mir ;) Und um ein “Themen-Mittagessen” zu schaffen hab ich mir doch gleich ein gutes Stück Lachs geschnappt – natürlich mitsammt der Haut. Also beide bis obenhin zugeschnürt – doch in diesem Fall kann ich sagen: steht den beiden recht gut – also die Haut und die Schale.

Es ist ja gar nicht so einfach ein Steak perfekt zu braten. In meiner Hobbyküche gab es schon so manche Schuhsohle, auch wenn ich mir oft keines Fehlers bewusst war. Doch es ist halt auch extrem wichtig, dass das Fleisch eine gute Qualität hat. Da ich schon lange kein Steak mehr gebraten habe, dachte ich, es wär mal wieder an der Zeit und so hab ich mir eines bei einem guten Metzger besorgt. Die Metzgergehilfin war zwar leider nicht ganz so sicher in ihrem Tun, aber letztendlich hatte ich doch ein ganz nettes Stück Fleisch in meiner Einkaufstasche.
