Zutaten für 4 Personen:

600g Rinderfilet am Stück

2 EL Butterschmalz

etwas grobes Meersalz

Pfeffer aus der Mühle

1l Rotwein

1/4l roter Portwein

1 Packung Suppengemüse (Karotten, Lauch, Peterwurfel, Sellerie, Petersilie)

2 Zweige Thymian

2 Zweige Rosmarin

2 Lorbeerblätter

1 EL schwarze Pfefferkörner

2 Schalotten

150g kalte Butterwürfel

Salz

Zubereitung:

Das Backrohr auf 120 Grad vorheizen.

Das Suppengrün würfeln und zusammen mit dem Rotwein, Portwein, Thymian, Rosmarin, Lorbeerblättern und den Pfefferkörnern aufkochen und einreduzieren lassen.

Das Rinderfilet eventuell noch parieren und in einer Pfanne mit dem Butterschmalz kurz von allen Seiten anbraten (=schließen). Etwas Backpapier auf ein Backblech legen und das Filet für ca. 80 Minuten im Ofen garen.

Wenn die Sauce auf ca. 1/3 einreduziert ist wird sie durch ein Sieb geleert um das Gemüse herauszufiltern. Die Schalotten schälen und in ganz feine Würfel schneiden. Die Sauce wieder zurück auf den Herd stellen und mit den Schalotten weiter einreduziern lassen. Wenn sie dick genug ist, dann noch einzelne Butterwürfel einrühren bis sie richtig aufmontiert ist.

Nach 80 Minuten das Filet aus dem Rohr nehmen, in Alufolie wickeln und 5 Minuten ruhen lassen.

Ich habe mir als Beilage einfach Tiefkühl-Rotkraut mit Maroni und Apfel gemacht. Ich liebe das und der Aufwand spricht für mich dafür. Ich rühme mich aber auch nicht das zu tun, deswegen gehe ich in meinem Rezept auch nicht näher darauf ein

Das Filet in Scheiben aufschneiden und zusammen mit der Beilage und der Sauce auf einem vorgewärmten Teller anrichten.
