Zutaten für 900g Marmelade:

1kg Äpfel (ich habe Elstar verwendet)

3 EL Zucker

1/2 TL Vanillepulver

1/2 TL gemahlenen Zimt

500g Gelierzucker 1:2

Saft einer halben Zitrone

1 EL Rum

Zubereitung:

Die Äpfel schälen und in Würfel schneiden, mit der Größe hab ich es nicht ganz so genau genommen, ich mag es gerne wenn die Stücke nicht ganz gleichförmig sein. Nur zu groß dürfen sie nicht sein, also maximal 2cm. In einer großen Pfanne 3 EL Zucker zum karamellisieren bringen und die Apfelstücke zugeben. Das Karamell erhärtet sich sofort wieder, durch 10 minütiges kochen auf niedriger Temperatur lösen sie sich allerdings wieder auf und geben den Apfelstücken eine schön braune Färbung und auch diesen Bratapfelgeschmack der spätestens jetzt die ganze Küche ausfüllt. In einem großen Topf den Pfanneninhalt mit dem Gelierzucker, dem Zimt, dem Vanillepulver und dem Zitronensaft vermischen und für ca. 8 Minuten richtig aufkochen lassen. Die genaue Zeit steht auf der Gelierzuckerpackung, trotzdem die Probe machen indem man einen Löffel Marmelade auf einem kalten Teller tropft und schräg hält. Wenn die Marmelade stockt dann ist sie genau richtig. Nun vom Herd nehmen und den Rum einrühren und sofort in heiß ausgewaschene Gläser geben. Die Gläser so voll wie möglich füllen und auf den Kopf stellen. Über Nacht stehen lassen und am nächsten Morgen genießen.

Tip: Passt auch hervorragend zu div. Fleisch als Soße.
