Als ich dieses Rezept in einer Kochzeitschrift sah, musste ich es sofort ausprobieren. Um genau zu sein, war es das Foto das mich in seinen Bann nahm. Jetzt – mit vollem Magen – muss ich allerdings folgendes Resume ziehen: Dieses Rezept ist absolut in Ordnung, für den Aufwand lohnt es aber nicht. Es sieht zwar wirklich sehr gut aus, aber die Prozedur mit dem Couscous kann man sich auch sparen und einfach reine Topfenknödel machen. Trotzdem: die Sauce ist sehr zu empfehlen.

Zutaten für 4 Portionen:
150g Couscous
300ml Milch
1 Packung Vanillezucker
Salz
4 Eidotter
120g Topfen
150g geriebene Mandeln
60g Rohrzucker
2 Äpfel
200ml Orangensaft
6 Kardamomkapseln
1 TL Speisestärke
Zubereitung:
Die Äpfel schälen und in feine Scheiben schneiden. Den Orangensaft mit den Kardamomkapseln mischen und in einem kleinen Topf zum kochen bringen. Die Apfelstücke zugeben und 1 Minute ziehen lassen. Die Speisestärke mit einem Esslöffel Wasser mischen und in die Apfelsauce geben und gut einrühren bis die Mischung etwas bindet. Die Sauce nun beiseite stellen und die Mandelbrösel vorbereiten. Dazu die geriebenen Mandeln mit dem Zucker in einer großen Pfanne vorsichtig goldbraun rösten und in einem Teller auskühlen lassen.
Für die Knödel den Couscous auf einem Blech mit kalten Wasser begießen und sofort das Wasser wieder durch ein feines Sieb drücken. Der nasse Couscous muss jetzt 15 Minuten quellen um anschließend wieder im Blech fein zerrieben zu werden. Nun die Milch zusammen mit dem Vanillezucker und einer Prise Salz aufkochen lassen, den Couscous einrühren und andicken – dann 10 Minuten im geschlossenen Topf ziehen lassen. 10 Minuten lang im offenen Topf auskühlen lassen, dann Eigelb und den Topfen untermischen und ca. 12 Knödel formen. In einem großen Topf Salzwasser zum Kochen bringen und die Knödel ins kochende Wasser legen, kurz aufkochen lassen und den Topf wieder vom Herd ziehen und die Knödel weitere 10 Minuten ziehen lassen. Die Knödel gut abtropfen lassen und in den Mandelbrösel wälzen. Auf den Tellern einen Apfelsaucen-Spiegel machen und je 3 Knödel mit etwas zusätzlichem Brösel darauf anrichten.

Man kann ja auch mal was anderes probieren. Dann weiß man das herkömmliche Rezept oft erst zu schätzen.
